Ramps or wild leeks are a favorite here in the Catskills, and are some of the earliest wild edibles to emerge. With their garlicky-onion flavor and high level of vitamin C, it’s no wonder they are sought out by foodies and chef’s alike. Look for wild leeks in the woods and mountains on your next hike, but make sure not to take them all one patch as they don’t regrow otherwise. Check out your local farm store like Main Street Farm, Lucky Dog Farm, or Eagle Hollow Farm as many of them have harvests available!
