Double Chocolate Zuchinni Bread

Preheat oven to 350 degrees, lightly grease a 8 ½”” X 4 ½” loaf pan

  • 2 eggs
  • 1/3 Cup of Honey
  • 1/2 cup vegetable oil
  • ½ cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon salt
  • ½ teaspoon baking soda
  • ½ teaspoon backing powder
  • ½ teaspoon espresso powder (optional)
  • 1/3 cup cocoa
  • 1 2/3  cups all-purpose flour
  • 2 cups shredded, unpeeled zucchini, gently pressed
  • 1 ¼  cup chocolate chips, save ¼ cup for sprinkling on top of bread

  • 4 garlic cloves, peeled
  • 4 teaspoons dill seed or 4 fresh dill heads

  • 1/4 cup canning salt

Directions

Dark Maple-Walnut Ice Cream

Ingredients:
1 Cup Dark Maple Syrup
1 Cup Whole Milk
2 Cups Heavy Cream
1/2 Cup Walnuts – chopped

Directions:
Place the maple syrup in the fridge for two hours. Combine the maple syrup, milk and heavy cream and pour the mixture into an ice cream maker. Follow the manufacturer’s instructions for your machine. Add the walnuts during the last 5 minutes of churning. Transfer the ice cream to an airtight container and place in the freezer for a couple of hours.
